
BAKED POTATO SURPRISE
SERVES 4
INGREDIENTS
4 large potatoes, (russet potatoes)
1 tbsp olive oil
1 cup (150g) chopped cooked chicken
1/4 red pepper, finely chopped
1/4 green pepper, finely chopped
1 chicken stock cube, crumbled
1/3 cup mayonnaise
40g Butter, melted
1 tbsp fresh chives, chopped
½ cup grated cheddar
¼ tsp paprika
METHOD
1. Scrub and dry potatoes, prick all over
with fork. Place potatoes on oven rack.
Bake in moderate oven (180–200°C)
about 1 hour or until soft when tested
with skewer.
2. Cut potatoes in half, lengthways,
scoop out flesh leaving 5mm shell.
Place potatoes on oven tray, brush inside
and out with oil sparingly, bake in hot
oven for 20 minutes.
3. Meanwhile, mash scooped out potato
in bowl, add chicken, peppers, stock cube,
mayonnaise, butter and chives. When potatoes are ready,
spoon mixture back into potato shells,
sprinkle with cheese and paprika.
4. Bake in moderate oven about
20 minutes or until lightly browned.
