BEETROOT AND
CITRUS SALAD
Use gloves when peeling
off the beetroot skin as it can
stain your hands and nails
purple. PREPARATION TIME: 35
MINUTES. SERVES: 2 PEOPLE.
INGREDIENTS
DRESSING :
1 whole beetroot (approximately 300-350g)
Fine zest of an orange
125 ml olive oil
3 stalks parsley leaves,
roughly chopped
Salt and pepper to taste
METHOD
Place the whole beetroot in
boiling water and leave to
boil for 30 minutes. Remove
from water and gently peel
the skin off under running
water. Using the rough side
of a grater, grate the beetroot
as you would grate carrots.
Mix in the orange zest, parsley
and olive oil. Season with salt
and pepper to taste.
